Melinda’s Keto Choc Brownies


Hi there gluten free and keto/low carb fans!  Thanks for clicking through to download this recipe.  I’m super happy with the taste and texture and how quickly it came together.  My keto choc brownies were created from our Melinda’s Keto Choc Pudding Mix and were designed to trick the resident 13 year old teen boy into consuming some greens.

Thanks to all of the recipe inspo from various bloggers I was able to grab bits and pieces of ideas to make this work with our mix. Sadly he spotted the miniscule strands of zucchini so alas no luck. The remaining pieces ended up at my sister-in-laws as her family is far less picky and love Aunty Mel’s random creations!!

Melinda’s Keto Choc Brownies


1 x pack Melinda’s Keto Choc Pudding Mix
120g x 86% dark chocolate, chopped
120g x macadamia butter (or almond or peanut butter)
1 zucchini, peeled if you’re trying to hide it + grated finely
3 XL eggs (lightly beaten)
100g x butter (melted) or oil of choice


1. Preheat oven to 170 degrees. Grease and line a 20cm square tin.
2. Melt butter and chopped chocolate in a microwave proof bowl until melted. Stir and add premix, macadamia butter, grated zucchini & juices, eggs and melted butter and stir until combine.
3. Transfer batter to prepared tin. Bake for approx 20-25 minutes or until it’s not wobbling in the centre. Cool and refrigerate until cold and then portion and serve to unsuspecting teens!!!

Those who loved it enjoyed it with some whipped double cream! DELISH + healthy.

Extra Ideas using Melinda’s Keto Choc Brownie recipe …

If you have a celebration coming up, make two cakes. Sandwich together with some whipped double cream, raspberries and cover with a dark chocolate ganache!
