Gluten Free Function Recipe: Red Velvet Cheesecake Swirl Brownies

Gluten Free Function Catering Recipe: Red Velvet Cake Cheesecake Brownies
1 x Melinda’s Red Velvet Cake Mix
2 x XL large eggs, room temperature
40g butter, room temperature
120ml milk


225g Philadelphia cream cheese, softened
50g granulated sugar or alternative
1 egg yolk
1/2 teaspoon pure vanilla extract
1. Preheat the oven to 170°C fan-forced. Grease and line a 20cm square baking pan
2. Make the brownie layer first: Prepare your Melinda’s Red Velvet Cake Mix as per the instructions. Pour the batter into prepared baking pan, leaving about 3-4 tablespoons for the top.
3. Make the cheesecake swirl: Beat the softened cream cheese, sugar, egg yolk, and vanilla in a medium bowl until completely smooth. Dollop spoonful’s of the cream cheese mixture on top of the prepared brownie batter. Cover with the last few Tablespoons of brownie batter. Glide a knife through the layers, creating a swirl pattern.
4. Bake the brownies for approx 30 minutes or until a toothpick inserted in the middle comes out clean. Allow the brownies to cool completely before cutting into squares.
