Hello fellow allergy-free bakers!
As we near the end of 2021 and Christmas Day and festive plans start to come together now is the time to collate all of your favourite gluten free Christmas recipes so you can enjoy a ‘safe’ gluten free lunch/dinner option for you and your allergy-free family and friends. If you’re hosting and have come across this gluten free Christmas recipe I can tell you now that your allergy guests will LOVE you for this option. Be aware they will probably ask you several times “are you sure this is gluten free?” because it looks too delicious to be true!
You’ll need two (2) packs of our Melinda’s Gluten Free Goodies Gingerbread Loaf Mix to whip up this bowl of deliciousness Feel free to use substitutes to suit your guests. Dairy free margarine or coconut oil, coconut or lactose free cream, lactose or dairy free sour cream and create your own gluten& dairy free + vegan caramel sauce if you need.
Melinda’s Gluten Free Christmas Recipe: Gingerbread Trifle
2 x Melinda’s Gingerbread Loaf Baking Mix
900ml thickened cream
330g dulce de leche (gluten free caramel sauce)
250g sour cream
1/3 cup (40g) icing sugar, sifted
90ml marsala or brandy (optional)
1½ tsp cinnamon
Prepare one box of Melinda’s Gluten Free Goodies Gingerbread Loaf Baking Mix in a 20xm square tin. Cook for approx. 20 minutes or until firm in the middle and set aside. then prepare the second box as bikkies as per the ‘variations’ directions on the box and set aside to cool.
Divide thickened cream evenly between two bowls. Add the dulce de leche to one bowl and whisk until thickened. Add sour cream and icing sugar to second bowl and whisk until thickened.
Cut ginger cake into 2cm-thick slices, then layer one-third of slices over the bottom of a 3L (12-cup) trifle dish. Drizzle with one-third of the marsala, sprinkle over one-third of the cinnamon, then one-quarter of the gingerbread bikkie crumbs.
Top with one-third of the dulce de leche mix, then one third of the whipped cream mixture. Repeat layering process twice, finishing with remaining biscuit crumbs.
