Celebration time! Another recipe! I am excited to share another favourite recipe of mine, a decadent and rich gluten-free chocolate cake.
If you’ve got a birthday, graduation, an event, a celebration, a potluck, or just a craving for something sweet, this is the perfect cake to serve to chocolate lovers. And who isn’t a chocolate lover? I know many of my gluten-intolerant friends are, so this is an easy recipe substituting gluten ingredients for allergy safe alternatives. Trust me, it will taste just as good as the ones with gluten, if not better!
My goal is to make gluten-free baking easy and delicious! Sometimes it’s as simple as substituting gluten-free flour and gluten-free chocolate. In fact, this is actually how I created this recipe. Originally it was one of my sister-in-law’s recipes, which I converted to gluten-free.
Mel’s Gluten-Free Chocolate Mud Cake
Prep Time: 15mins
Baking Time: 1 and a half hours
Serves: 16 large pieces or 32 small pieces
Baking Temperature: 150 degrees
Ingredients
250g butter
460g sugar
5ml vanilla extract
500g gluten-free dark chocolate
2 eggs
255g Melinda’s Gluten-Free Self Raising Flour
40g good quality cocoa
20g good quality coffee
150ml thickened cream

Recipe
- Preheat the oven to 150 degrees and grease and line a 20cm high-sided square cake tin.
- Melt the butter in a saucepan. While butter is melting, dissolve the coffee in 1 1/2 cups of hot water. Add coffee, 200g of the chopped chocolate and sugar to the butter. Stir until combined and sugar is partially dissolved. Remove the saucepan from the heat and cool.
- In a large bowl, sift the flour and cocoa. Gradually pour in the melted chocolate mixture, stirring with a whisk to avoid lumps. Add eggs and vanilla. Whisk until smooth and combined.
- Transfer mix to prepared tin and bake for 1 and a half hours or until cooked in the centre.
- In a saucepan, bring cream to the boil. Remove from heat and stir in the remaining chopped chocolate until melted. Set aside to thicken. Ice once the cake has cooled and then serve the gluten-free chocolate cake.

Although, this gluten-free dessert recipe holds a very special place in my heart, a representation of love and special moments. I made 10 of these chocolate mud cakes for my wedding reception 22 years ago! The chefs of the venue loved them so much that they offered me a $200 dining voucher if I gave them the recipe.
