Gluten Free Beetroot Salad to Celebrate Spring

It’s time for my gluten free beetroot salad to make an appearance. Welcome to a gluten free spring! Now that it is officially spring, it’s salad time. Today I’m sharing one of my all time favourite salads, the gluten free beetroot salad. Of course, it’s the creamy purple colour and flavour that does it for me in this salad. It’s next level with minimal effort. That beautiful spring like colour of the beetroots mixed with cream reminds me of lavender. While the fresh flavours of tarragon and chives lifts the whole thing to another level. If you find some edible blooms to sprinkle over the top, all the better.

Making a Meal of the Gluten Free Beetroot Salad

Pair this salad with ham off the bone and a potato bake and you have the makings of a lazy Sunday lunch. The ingredients are easy to find and the prep time is minimal. I often make a potato bake for Saturday dinner, then use the leftovers for this Sunday lunch.

Creamy Beetroot Salad

Gluten Free Beetroot Salad Ingredients

825g can of baby beetroot
2 tablespoons sugar
2 tablespoons white vinegar
1 tablespoons horseradish
1 tablespoon cream
2 teaspoons fresh tarragon
300g sour cream
1/2 cup cream
1/2 cup walnuts
2 tablespoons chives

Gluten Free Beetroot Salad Method

Drain beetroot and set aside.

Finely shred tarragon and chives.

Place beetroot into a serving bowl with chopped walnuts.

Combine all other ingredients in a bowl and mix well.

Pour over the beetroot and serve.
