Ingredients

250g (8.8oz) pitted dates
1 cup boiling water
1 tablespoon honey
125g (4.4oz) butter
1 cup sugar or 1/2 cup natural sweetener (eg. Norbu)
1 egg
2 1/2 cups Melinda’s Gluten-Free Self Raising Flour
1/2 cup pecans


Method

1. Preheat oven to 155 degrees. Grease & line a large loaf tin.
2. Chop dates & pecans. In a large saucepan, heat dates, water & honey for about 3 mins (or microwave). Stir in butter & sugar, stir until melted. Stir in egg, flour & pecans until combined. Transfer to the greased loaf tin & bake for 1 hr.

Tips: Use walnuts instead of pecans.
If using an egg replacer you may need to increase
the cooking time
