Mel’s Trifle

Ingredients

1 batch Melinda’s Party Cakes (or a gluten free butter cake)
1 tin sliced peaches
1 packet red jelly
1 packet gluten-free marshmallows
1 punnet blueberries
1 punnet strawberries
1 litre gluten-free custard
1/2 cup desiccated coconut


Method

1. Prepare jelly as per packet and set until preparing the trifle. Cut party cakes into small pieces. Wash and dice strawberries. Cut marshmallows in half.
2. Select a large serving bowl or several small bowls and layer the ingredients alternatively until used. Pour over custard, allow to stand in the fridge for 1 hour. Top with additional custard and sprinkle with coconut to serve
