1. Preheat oven to 160 degrees. Grease six 1-cup ramekins. Separate eggs.
2. Place melted butter, lemon rind & juice, stevia, milk & egg yolks in large bowl. Whisk to combine.
3. Using an electric mixer, beat eggwhites until soft peaks form. Fold 1/4 eggwhite into lemon mixture until combined. Gently fold in the remaining eggwhite.
4. Spoon mixture into prepared ramekins. Place dishes in a large baking dish. Pour boiling water into baking dish until halfway up sides of smaller dishes. Bake for 20-25 mins or until golden & just set. Dust with icing sugar before serving.
