Ingredients

800g tin coconut cream
2 teaspoons vanilla extract
2 teaspoons agar agar
1 teaspoon honey or rice malt syrup

 


Method

1. Place all ingredients in saucepan. Bring to boil, simmer for 1 min. Cool slightly, place in container. Freeze for 18 hrs minimum.
2. Remove from freezer, defrost slightly & roughly chop. Place in blender & blend for approx 5 mins. Mixture should be light & fluffy like whipped cream. For a stronger texture, use more agar agar.

Tips: It’s imperative that mixture be frozen at least for 18 hrs.
