Choc Delight Slice

Ingredients


300g Melinda’s Gluten-Free Self Raising Flour
80g gluten-free cocoa powder
70g desiccated coconut
115g rapadura sugar
70g walnuts
210g butter
20g golden syrup
10ml vanilla extract
460g gluten-free icing mixture
60ml hot water


Method

1. Preheat oven to 180 degrees. Grease & line a slice tin.
2. Finely chop walnuts, melt butter. Sift flour & 2 tablespoons of the cocoa into a bowl. Stir in coconut, sugar & walnuts.
3. Combine 180g of the melted butter, golden syrup & 1 teaspoon of vanilla. Heat until combined. Add to dry ingredients, stir & press into tin.
4. Bake in oven for 20 mins or until cooked. Cool & finish with icing.
5. Icing: combine icing sugar, remaining cocoa, vanilla & butter with hot water. Spread over cooled slice. Cut into squares to serve.
