Ingredients

90g (3.2oz) butter
180g (6.3oz) gluten-free coconut biscuits
2 teaspoons ground ginger
2 cups gluten-free milk choc chips
1 cup shredded coconut
1 cup macadamias
395g (13.9oz) tin condensed milk


Method

1. Preheat oven to 180 degrees. Grease & line (sides & ends) of a 27x18cm slice tin.
2. Crush biscuits, finely chop macadamias. Add all dry ingredients to a large bowl. Melt butter, add condensed milk to melted butter. Combine. Add butter mixture to dry mix. Combine & lightly press into tin. Bake for 15 mins, rotate in oven, bake for another 15-20 mins until deep golden brown (the condensed milk will caramelise through the slice).
3. Place in fridge to cool completely (or freezer to make it go quicker!) remove from tin, place on chopping board. Cut into pieces.
