Chewy Choc Chip Cookies

Ingredients

2/3 cup butter
2 cups brown sugar or 1 cup alternative sugar
2 eggs
2 tablespoons hot water
2 2/3 cup Melinda’s Gluten-Free Self Raising Flour
1/4 teaspoon salt
300g gluten-free milk choc chips
1 teaspoon vanilla extract


Method

1. Preheat oven to 190 degrees. Line several cookie trays with baking paper.
2. Beat melted butter, vanilla, sugar, eggs & hot water together.
3. Stir in flour & salt. Add choc chips.
4. Drop small teaspoonsful of mixture onto baking paper, cook for 8-10 mins. Remove & cool on wire racks
