Ingredients

2 cups medium grain rice
5 potatoes
5 eggs
1 cup pizza cheese
2 cups dried gluten-free breadcrumbs
1 tablespoon parsley
2 cups vegetable oil

 


Method

1. Cook rice according to packet. Drain & rinse with cold water
2. Peel, boil & mash potatoes. Combine cooled mash, rice, beaten eggs, cheese & chopped parsley.
3. With wet hands, roll mixture into 5cm-long oval croquettes. Toss in breadcrumbs.
4. Heat oil in deep frypan & cook croquettes for 2-3 mins or until golden brown. Drain on paper towel. Serve with gluten-free sauces or chutneys.
