Capsicum Dip

Ingredients

250g cream cheese
2 x 150g tin diced capsicum
1 cup brown sugar or ½ alternative sugar
1/2 cup apple cider vinegar
2 cloves garlic
1/4 teaspoon chilli powder


Method

1. Drain capsicums. Crush garlic. Combine all ingredients except cream cheese in a small saucepan. Bring to the boil. Simmer for 25-30 mins until reduced by half. Cool in refrigerator.
2. Invert cream cheese onto small platter or flat bowl. Pour cold capsicum dip over top & serve with Melinda’s Water Crackers.
