Ingredients

125g (4.4oz) cream cheese
1 cup Melinda’s Gluten-Free Self Raising Flour
125g (4.4oz) butter
125g (4.4oz) gluten-free shortcut bacon
1 onion
150g (5.3oz) baby spinach leaves
3/4 cup thickened cream
3/4 cup milk
2 eggs salt pepper
2 tablespoons parsley


Method

1. Cream softened butter & cream cheese. Add flour & mix well. With floured finger tips press into pie or quiche tin & blind bake 10 mins.
2. Fry chopped bacon & diced onion in a pan until cooked. Add spinach leaves, cover frypan with lid for 1 min until leaves soften. Spread cooked filling into shell.
3. Combine cream, milk, eggs, seasoning & chopped parsley & pour into shell over filling.
4. Bake at 220 degrees for 10 mins. Reduce oven to 180 degrees & cook for 30-35 mins or until set.
