Apple & Berry Crumbles

3 green apples
2 cups frozen mixed berries
1 cup sugar or 1/3 cup natural sweetener (eg. Norbu) 200ml Riesling liqueur
1 teaspoon cornflour
1/2 cup desiccated coconut
1/2 cup rolled quinoa flakes
1/2 cup Melinda’s Gluten-Free Self Raising Flour
1/2 cup caster sugar
1/2 cup brown sugar
125g (4.4oz) butter
1 teaspoon cinnamon



1. Preheat oven to 180 degrees.
2. Core, peel & thinly slice apples. Combine apples, liqueur & sugar in a saucepan. Bring to the boil, simmer for 5 mins. Add berries, stir to combine. Cook for another min. Strain, reserving liquid. Set fruit aside.
3. Return liquid to stove and cook for another 5-10 mins or until liquid has reduced to half. Mix cornflour with 1 tablespoon water. Add to liquid, cook for 3 mins. Remove from heat. Return apple & berries to liquid, stir gently. Divide mixture into 6 ramekins.
4.Combine coconut, quinoa flakes, flour, sugars & cinnamon. Rub chopped butter through until crumbly, or blend in food processor. Top fruit with crumble mix, bake for 15 mins or until crumble is golden brown.
