Gluten Free Dessert with a Difference.. Mulberry White Chocolate Cakes

Gluten free desserts are fairly common nowadays, but what if you are looking for a gluten free dessert recipe that is easy enough to make but still a bit special? Well, look no further than this delight. Mulberries and white chocolate scream fancy, but this is an easy to follow gluten free dessert recipe, that can also be made vegan.

Especially good for the busy mum, just put aside 15 minutes for prep and another 25 minutes baking time and you will have yourself a wonderful gluten free dessert. Mini mulberry cakes with white chocolate will make everyone happy and have your family coming back for seconds.

Best served warm, mini mulberry cakes with white chocolate are one of my all time favourite easy peasy gluten free desserts. Plus, if you happen to have any left, then freeze them for another day.

Mini Mulberry Cakes with White Chocolate

Ingredients

This gluten free recipe uses everyday ingredients. For a vegan version replace the ingredients with your preferred options (eggs, buttermilk & butter).  We like mashed banana instead of eggs but you can also use an egg replacer (they may need a little longer cooking). Can’t find mulberries, then try raspberries as an alternate.

2 cups Melinda’s Gluten-Free Self Raising Flour
1 teaspoon gluten-free baking powder
1/4 cup caster sugar
100g dairy free white choc chips
2 eggs
1 cup buttermilk
1 teaspoon vanilla extract
125g butter
150g mulberries (fresh or frozen)

Method

1. Preheat oven to 180 degrees. Grease two 24-hole mini-muffin tin.
2. Sift flour and baking powder into a large bowl. Add sugar and choc chips.
3. Whisk eggs, buttermilk, vanilla and melted butter in a separate bowl. Gradually pour into flour, stir until just combined. Gently swirl chopped berries through.
4. Spoon into greased mini-muffin tins. Bake for 15 mins, rotate, bake for another 10 minutes or until cooked. Cool on wire rack.
